Pasiunea pentru g\u0103tit m-a \u00eempins s\u0103 \u00eenv\u0103\u021b \u00een mod constant despre asta \u0219i s\u0103 experimentez ceea ce g\u0103seam pe internet \u0219i citeam \u00een c\u0103r\u021bi.  Am \u00eenceput s\u0103 lucrez la un restaurant din Alba Iulia \u00een 2013 ca \u0219i ajutor de buc\u0103tar. Dup\u0103 doar o lun\u0103 eram buc\u0103tar full &#8211; time, iar dup\u0103 \u0219ase luni, la plecarea buc\u0103tarului \u0219ef de acolo, am preluat eu acest job. Dup\u0103 doi ani \u0219i jum\u0103tate am schimbat restaurantul \u0219i am continuat munca \u00een domeniu. Am muncit un timp \u0219i la o cantin\u0103, unde am \u00eenv\u0103\u021bat s\u0103 lucrez cu volume mari, ceea ce mi-a ajutat foarte mult ca \u0219i experient\u0103. Tot la cantin\u0103 am \u00eenv\u0103\u021bat totul despre estim\u0103rile de cantit\u0103\u021bi \u0219i de costuri, cum s\u0103 lucrez cu cantit\u0103\u021bi mari de m\u00e2ncare \u0219i munca eficient\u0103 \u00een buc\u0103t\u0103rie. \u00cen prezent sunt buc\u0103tar \u0219ef la restaurantul <strong>Pub 13<\/strong> din Alba Iulia \u0219i apreciez foarte mult colaborarea cu echipa de aici. <\/p>\n\n\n\n<p><strong>Urbea Mea:<\/strong> Care sunt atuurile tale \u00een buc\u0103t\u0103rie \u0219i ce te diferen\u021biaz\u0103 de ceilal\u021bi colegi de breasl\u0103?<\/p>\n\n\n\n<p><strong>Flaviu Toth\u0103zan:<\/strong> Principalul punct forte cred ca este faptul c\u0103 \u00eenv\u0103\u021b \u00een permanen\u021b\u0103, niciodat\u0103 nu sunt mul\u021bumit de ceea ce fac. Eu sunt, \u00eentr-adev\u0103r cel mai mare critic al meu \u0219i foarte rar mi se \u00eent\u00e2mpl\u0103 s\u0103 fac un preparat de care s\u0103 fiu mul\u021bumit 100%. Faptul c\u0103 sunt critic cu mine \u00eensumi m\u0103 \u00eempinge mereu s\u0103 \u00eenv\u0103\u021b \u0219i s\u0103 m\u0103 specializez \u00een permanen\u021b\u0103. Ce ne po\u021bi spune despre acest eveniment?<\/p>\n\n\n\n<p><strong>Flaviu Toth\u0103zan:<\/strong> A fost un eveniment de fine dining pe care l-am organizat la Pub 13, unde am f\u0103cut o selec\u021bie de preparate elaborate, lucrate mig\u0103los, cu multe elemente tehnice. Noi organiz\u0103m tipul acesta de evenimente pentru un num\u0103r restr\u00e2ns de persoane, care nu depa\u0219e\u0219te 30 de persoane, pentru a putea oferi o experien\u021b\u0103 deosebit\u0103 celor prezen\u021bi. Meniul a fost compus din cinci preparate. Pentru gustare am ales s\u0103 servim Macarons din sfecl\u0103 ro\u0219ie cu foie &#8211; gras. <\/p>\n\n\n\n<p><em><a rel=\"noreferrer noopener\" aria-label=\"Vezi mai multe despre eveniment. Am dorit s\u0103 omagiez o legum\u0103 aparent simpl\u0103, \u0219i s\u0103 g\u0103tesc ceva deosebit din ea. Desertul a fost realizat dintr-un mousse de br\u00e2nz\u0103 cu miere, l\u0103m\u00e2ie \u0219i yuzu, acoperit cu o glazur\u0103 de ciocolat\u0103 alb\u0103 cu lavand\u0103, pe un aluat din migdale. Toate felurile de m\u00e2ncare au fost acompaniate de vinuri de la crama <strong>Petro Vaselo<\/strong> din Timi\u0219, servite cu m\u0103iestrie de c\u0103tre somelieri. <\/p>\n\n\n\n<p><strong>Urbea Mea:<\/strong> Ce reac\u021bii a st\u00e2rnit evenimentul?<\/p>\n\n\n\n<p><strong>Flaviu Toth\u0103zan:<\/strong> Am fost impresionat de reac\u021biile pozitive ale celor prezen\u021bi. Am riscat destul de mult cu alegerea meniului \u0219i am avut emo\u021bii deoarece nu \u0219tiam c\u00e2\u021bi dintre cei prezen\u021bi vor fi receptivi \u0219i c\u00e2\u021bi vor \u00een\u021belege idea mea. \u00cens\u0103 am avut pl\u0103cerea s\u0103 constat c\u0103 cei prezen\u021bi au fost pl\u0103cut surprin\u0219i \u0219i c\u0103 au apreciat meniul pe care l-am servit.
